Dense in vitamins and minerals, chicory leaves are excellent raw, steamed, braised, or stir-fried. The leaf stems become quite sweet in cooler temperatures. This leafy green is also quite bitter and is excellent for poor digestions&#8230;though most of the bitterness disappears when cooked.
