The entire plant is edible: young leaves are a tasty cooked green; the flowers can be used as a salad or soup addition and the young seedpods are eaten as a fruit or dried seeds ground. The roots can be also dug up and cooked (preferably in fall\/winter of the first year of plant growth) and have a peppery parsnip flavor. 90 days to leaf. 150-200 days to root. Second year to flower. Biennial.
